Best Korean Taco Recipe

After years of research and testing, hours and hours spent at Asian markets and a few trial runs on different groups of friends- I believe this is the best Korean Taco Recipe out there.

A lot of the ingredients below you’ll need to get at an Asian market. I’ve snapped photos so you can see the brands I like. Some things, like Vietnamese Caramel Sauce, are hard to find but absolutely critical in producing a quality Korean Taco with the right flavor.

Step 1: The Meat

1.5 lb pork butt, thinly sliced just under 1/4 inch or so (not too thin as you do not want it to dry out when grilled. Ask your butcher to do this for you. Also, do not use lean pork as it will become dry.)

1/4 cup minced Lemongrass (xa bam). Many Asian markets will sell minced lemongrass in the freezer section.

1/4 cup sugar

2 tbs fish sauce (Squid brand, this is the cheap stuff and what most restaurants use)

1 tbs ground pepper (don’t eye this, measure it out)

2-3 cloves garlic, minced (not from a jar, mince this garlic fresh in a mini prep, you can mince with the shallots at the same time)

2 small shallots

3 tbs sesame oil

1 ¼ tbs Vietnamese Caramel sauce

Mix all ingredients and let pork marinade for a few hours prior to grilling.

Step 2: The Korean BBQ Sauce

2 tablespoons Korean fermented chili paste (Gochujang)

3 tablespoons sugar

2 tablespoons soy sauce

1 teaspoon rice wine vinegar

2 teaspoons sesame oil

Mix all ingredients and let sit for about an hour prior to serving. 

Step 3: The Asian Slaw

1/4 head of Napa cabbage, shredded

1 large carrot, julienned

1 green onion, thinly sliced

1/2 bunch of cilantro leaves

1/4 cup rice wine vinegar

6 teaspoons dark brown sugar

Zest and juice from 1/2 of a lime

1 and a 1/2 teaspoons of canola oil

1/2 teaspoon sesame oil

1/4 teaspoon Siracha

Mix all ingredients and let sit for about an hour prior to serving.

Step 4: The Toppings

Small package of corn tortillas

1 cucumber, sliced into 2 inch thin strips

1/2 bunch of cilantro leaves

2 cups bean sprouts

Korean red pepper flakes (Gochugaru)

Sesame seeds

Sweet chili sauce

Step 5: The Assembly

Cook up the pork over a charcoal bbq until done.

Take your tortillas and heat up in a tortilla warmer, then make the tacos as follows:

Tortilla, then layer with pork, apply Korean BBQ sauce over pork, add Asian slaw atop, add cucumber, add bean sprouts, add cilantro, top with sesame seeds, top with Korean chili powder, apply a light line of sweet chili sauce and serve immediately!
